This soup is quick and easy to make! It is easy to customize by adding different seasonings or you could add black beans for more protein and texture.
You will need:
1 Pound of Chicken
32 ounces of chicken broth
Coconut Milk (1, i am not sure why 2 are picture, oops)
1 Green Pepper
2 Sweet Potatoes
1 Cup Broccoli (we used frozen)
Seasonings (Cumin, Paprika, Cayenne Pepper)
Step 1: Chop the onion, sweet potatoes, green pepper, and broccoli
Step 2: Add all the chopped veggies to the crock pot. Then, add the chicken broth and coconut milk.
Step 3: Add your lemon juice (about 2 tbsp) and shake as much seasoning as desired
Step 4: Set the chicken on top and add more seasoning. Then, set your crockpot to high for 4 hours or low for 8 hours.
Step 5: After the set time, shred the chicken with 2 forks and stir back into the soup. Chop up your cilantro and sprinkle on top of your soup. ENJOY!
