Veggies/Beef Meal Prep

This recipe is so super easy! The hardest part is having the patience to cut up all the veggies but it is WORTH it! You can make this with or without meat. We chose to use ground beef using spicy seasonings to jazz up our weekly meal preps. Keep in mind as you go through this that this was meal prep for 2 people for 5 days. You may want to cut it in half if it is just for you.

 

You will need:

Avocado oil

Himalayan Sea Salt

Pepper

Wax Paper

2 Medium Sweet Potatoes

4 Parsnips

1 Large Rutabaga

1 Large Turnip

10 Carrots

2 lbs Ground Beef

 

Step 1: Peel your veggies and cut them into small cubes

 

 Step 2: Put all of your cubed veggies in a large bowl. Pour 2-3 Tbsp of avocado oil over top along with salt/pepper (as much as desired) and mix so all veggies get coated.

 

Step 3: Lay wax paper across a pan and spread the veggies across it. You may need more than 1 pan as you want just one layer. If they are stacked on each other, they will burn. Then, bake the at 350 degree F for about 15-20 minutes or until fork tender. 

 

 

 Step 4: While the veggies bake, brown your ground beef adding whichever seasonings you choose. I believe we used cumin, curry, and cayenne pepper. Drain the beef once it is cooked through to your liking.

 

 

Step 5: Once your veggies and beef are done, let them cool for 15 minutes before transferring the into your meal prep containers. I just did 1 scoop of each. This recipe made 10 meal preps.
